Since we’re on the subject of chili, here’s a quick veggie chili recipe from Cooking Light to keep your insides as warm as your outsides.

1 tablespoon vegetable oil
2 cups chopped onion
1/2 cup chopped yellow bell pepper
1/2 cup chopped green bell pepper
2 garlic cloves, minced
1 tablespoon brown sugar
1 1/2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
2 (16 oz.) cans stewed tomatoes (undrained)
2 (15 oz.) cans black beans, rinsed and drained
1 (15 oz.) can kidney beans, rinsed and drained
1 (15 oz.) can pinto beans, rinsed and drained
Heat the oil in a Dutch oven over medium-high heat. Add onion, bell peppers, and garlic; sauté 5 minutes or until tender. Add sugar and remaining ingredients, and bring to a boil. Reduce heat, and simmer 30 minutes.

While we’re at it, let’s squash that vitamin D deficiency we’re all going to inevitably get. You know how we all get sort of pale, sallow, depressed and weak during the darker months? I’m no doctor, but my doctor did told me it’s probably a mild form of vitamin D deficiency.
There are foods in which vitamin D naturally occurs - cod liver oil (is that considered a food now?), herring, catfish, mollusks, salmon, trout, halibut - but if you’re not into eating bottom dwellers, you can also take vitamin D supplements (anywhere from 50 IU to 10,000). I take 2,000 IU a day, and I’ve been able to survive without a happy lamp. Good luck.
